Standard
oven
These ovens are the most common commercial
oven that you will find in restaurant kitchens. The standard oven offers some
basic heat functions at a particular temperature. This kind of ovens run on
either gas or electricity. The main reason for the popularity of this kind of
oven is due to its ease of use and its affordability compared to the other two
models that are available in the market.
Although this type of oven fulfills the entire
basic cooking requirement for any industrial commercial kitchen equipment, it has
some disadvantages like it heat the food slowly and unevenly. The reason for
this is that the hot air is not able to circulate freely which makes heating
uneven inside the oven.
Convection
ovens
If you take a poll among chefs and bakers
about which is their preferred choice of the oven, then you will find that most
of them love the convection oven since it solves the major disadvantage of a
standard oven. In this oven, the working principle is the same as far as how
the heat is evolved, but with one important difference that relates to how it is
circulated inside the oven. In the convection oven, fans are used to circulate the hot air inside the oven to provide uniform heating. This has several advantages,
one of them being the cooking time is much less, and the second is that food
can be cooked at a lower temperature compared to the standard oven available in
the market.
While this oven is more efficient in cooking
food, it is also more expensive compared to the standard oven. However since
faster heating at lower temperatures reduces the overall energy consumption,
the overall operational costs of this type of oven are much less compared to
the standard oven.
Conveyor
oven
You will mainly find this type of oven in any
fast food restaurant, wherein large quantities of cooked or baked food are to
be prepared continuously. Furthermore, these foods require similar temperature
and time. The advantage of such type of equipment is that
it can produce consistent products automatically with little supervision from
the kitchen staff.
